- In a large nonstick skillet, over medium-high heat, cook the white onion and mushrooms in the coconut oil until soft (about 3 minutes).
- Add the tofu and spinach and cook an additional 3 minutes.
- Stir in the tomatoes, eggs, Parmesan and thyme and cook until the egg is firm.
- Serve immediately.
