Directions
Steam cauliflower in a steamer basket over boiling water until tender, about 3 to 4 minutes. Mash with a fork.
Meanwhile, heat a nonstick skillet with 1 teaspoon virgin coconut oil over medium-high heat. Add onions and sauté until tender.
Add onions to mashed cauliflower and top with cheese.
