Ingredients

  • 1/8 cup coconut oil
  • 1/3 cup slivered almonds
  • 8 cups sliced celery
  • 2 tablespoons dried minced onion
  • 2 cubes chicken bouillon
  • 1 teaspoon xylitol (optional)
  • 4 cherry tomatoes
  • 1/4 teaspoon ground ginger

Directions

  1. Melt coconut in a large skillet over medium heat; cook and stir almonds until golden, 2 to 3 minutes.
  2. Stir celery, onion, sliced tomatoes, bouillon, xylitol, and ginger into almonds.
  3. Continue to cook and stir until celery is tender, about 10 minutes.
