Using a fork, whisk eggs, coconut cream, salt, pepper and fresh tarragon (use 1/2 as much if using dried) in a bowl.
Melt butter in a medium nonstick skillet over medium heat. Pour in the eggs. Cook 1 minute without stirring.With a wooden spoon or heat-resistant rubber spatula, gently turn the eggs from bottom to top, scraping around all edges. Eggs should not brown.
When eggs form soft and creamy small curds, turn onto warm plates and serve immediately.
Tip!
This recipe does not contain many non-starchy vegetables. To maximize your results, it is highly recommended that you eat at least three servings of non-starchy vegetables via a SANE side dish or green smoothie along with this main dish.
