Heat oil in a large skillet over medium heat. Add celery and white onion; cook 5 minutes, until onion is softened. Sprinkle with guar gum, salt and pepper and mix well. Sauté 2 minutes. Stir in broth; heat to boiling.
Cover and simmer 10-15 minutes, until celery is tender.Uncover and stir in tomatoes and olives. Simmer 3 minutes, until liquid thickens. Season to taste with salt and pepper. Sprinkle with parsley.
