2 TBSP Cheddar Cheese
1 oz Salsa
1 large Egg & 6 Egg whites
1/2 fruit without skin and seed California Avocados
6 cups spinach

Directions
Wilt spinach is a pan over low heat
Heat oil in a nonstick skillet over medium high heat. Add slightly beaten eggs to skillet. Cook 3 minutes, flip over, cook other side for 2 minutes.
Add shredded Cheddar, spinach, and avocado to half of the omelet. Flip other half over top. Cook an additional 1-2 minutes to melt cheese.
Top with salsa and serve immediately.
