In a medium bowl beat everything except the coconut flour and Luo Han Guo together with a fork.
Gradually add coconut flour while stirring until dough holds together.
Add Luo Han Guo, starting with 1/4 teaspoon, and adding additional Luo Han Guo 1/4 teaspoon at a time until desired level of sweetness is reached. Luo Han Guo is MUCH sweeter than sugar, so you will not need to use a lot of it. You may also add xylitol 1 tablespoon at a time until the desired level is reached.
Gather the dough into a ball, then pat into a 9″ greased pie pan.
Prick the dough with a fork.
Bake for 8-10 minutes or until lightly brown.
