Mixed Greens Cooked with Tomatoes and Ginger

Ingredients
1/2 teaspoon Garlic
2 medium whole Red Tomatoes
3 teaspoons Ginger
3 lbs Spring Mix Salad
1 small Onion
1/8 teaspoon Salt
1/8 teaspoon Black Pepper
2 tablespoons Unsalted Butter

Directions
In a large saucepan over medium heat, melt butter. Add onion; cook 5 minutes, until softened. Add garlic and cook 1 minute more.
Add tomatoes and ginger and cook 5 minutes, stirring occasionally. Stir in greens. Mix well, cover and cook 5 minutes, until wilted. Season with salt and pepper to taste.
