Directions
Heat oil in a nonstick skillet over medium-high heat. Add bell pepper and sauté until tender. Remove from pan and set aside.
Add eggs to pan and cook 2 minutes till underside is golden. Using a spatular and tilting the skillet, flip over. Place the sautéed bell pepper topped with cheese on half the eggs.
Gently flip the other half over the mixture and cook an additional 1-2 minutes to melt the crumbled feta cheese.
Slide from the skillet to a plate. Season with salt and freshly ground black pepper.
