Ingredients
6 ozs Pork and Beef Chorizo
6 large eggs & 24 egg whites
8 ozs Green Chili Peppers (Canned)
2/3 cup chopped or sliced Red Tomatoes
2 ozs Cheddar Cheese

Directions
Preheat broiler.
In a large oven-proof skillet, sauté the chorizo, breaking it up into bite-sized pieces over medium-high heat until cooked through; about 5 minutes. Drain off excess fat and leave in the pan.
Add lightly beaten eggs, green chilies, tomatoes and cheese to the chorizo. Cook over medium-high heat for 4-5 minutes then place pan under the broiler for 3-4 minutes until light and slightly puffed. Serve immediately.
Tip!
This recipe does not contain many non-starchy vegetables. To maximize your results, it is highly recommended that you eat at least three servings of non-starchy vegetables via a SANE side dish or green smoothie along with this main dish.
