1 cup celery, finely diced
2 tablespoons fresh parsley, chopped
2 tablespoons
mayonnaise
1/2 teaspoon Dijon mustard
1/2 teaspoon salt
1/4 teaspoon black pepper, freshly ground

Directions
Combine tuna, celery and parsley in a medium bowl.
Add mayonnaise, mustard, salt and pepper; stir to combine. Yields about 1/2 cup per serving.
Optional:
Serve on a bed of leafy greens, with cherry tomatoes, and garnished with some of the parsley, as pictured.
