1 medium apple
2 lbs Cabbage
1 tablespoon xylitol or erythritol (optional)
1 teaspoon Salt
2 tablespoons Vinegar (Cider)
1 small Red Onion
1/4 teaspoon Allspice Ground
2 2/3 fl ounces Red Table Wine

Directions
Shred cabbage.
Melt butter in a large, heavy Dutch oven over medium-high heat. Add chopped apple and onion. Cook 10 minutes, stirring occasionally, until tender.
Stir in cabbage and cook 8 minutes more, stirring frequently, until slightly wilted. Stir in xylitol or erythritol, vinegar, salt and allspice.
Cover and cook 10 minutes, stirring occasionally. Uncover, add wine. Cook 10-15 minutes more, until very tender. Season to taste with salt and pepper.
