Ingredients

  • 4 leeks, finely chopped
  • 8 carrots, finely chopped
  • 2/3 cup chicken broth
  • 1/4 cup butter
  • 2 tablespoons xylitol or erythritol (optional)
  • 1 teaspoon dried thyme
  • 1 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper

Directions

  1. Combine leeks, carrots, chicken broth, butter, xylitol or erythritol, thyme, salt, and pepper in a skillet; bring to a boil. Reduce heat and simmer until liquid evaporates, about 15 minutes. Cook and stir mixture until leeks and carrots are lightly browned, 2 to 3 minutes.
