2 large cucumber, seeded and chopped
2 medium green bell pepper, chopped
2 stalks celery, thinly sliced
1/4 cup and 2 tablespoons distilled white vinegar
2 tablespoons xylitol or erythritol (optional)
1 teaspoon salt
freshly ground black pepper to taste

Directions
In a bowl, mix the tomatoes, cucumber, green bell pepper, and celery. Mix the vinegar, xylitol, salt, and pepper in a separate bowl, and pour over the salad. Gently toss to coat. Cover, and refrigerate at least 2 hours, stirring occasionally.
